800 gSteak (stewing beef)
1 Onions
3 Carrots
1 Bell peppers
2 clovesGarlic
1 tspFresh parsley
1 tspDried thyme
4 tbspBalsamic vinegar
2 tbspBrown sugar
250 mlBeef stock
3 tbspTomato paste
1 tbspCornstarch
  1. Spray a large casserole pan over a medium heat with some cooking oil. Add the beef and lightly brown. Remove and set aside.
  2. Add the onions (quartered and sliced), minced garlic, and chopped carrots and continue to fry for a few minutes, add in a little water to deglaze pan if they stick.
  3. Add the cooked vegetables, browed beef, and the rest of the ingredients to a slow cooker and cook on low for 8 hours or high for 4-6 hours.
  4. Mix cornstarch with a little water to make slurry and stir into slow cooker. Slightly ajar lid for last 30 mins to thicken sauce. Sprinkle with fresh chopped parsley and serve with your choice of sides.
