| 50 g | Arugula | |
| 30 g | Parmesan | |
| 226 g | Penne | |
| 2 cloves | Garlic | |
| .5 tsp | Italian seasoning | |
| 40 g | Black olives | |
| 1 tsp | Maple syrup | |
| .5 tsp | Dijon mustard | |
| 3 tbsp | Olive oil | |
| 2 tbsp | Red wine vinegar |
- Cook the pasta according to the package instructions. Then drain and rinse with cold water.
- Chop the salad ingredients (tomatoes, carrots, bell peppers, onions, olives, arugula)and add them to a large bowl with the grated parmesan. In a small bowl, whisk together the rest of the ingredients for the dressing.
- Add the pasta to the salad ingredients and pour the dressing over the salad. Toss and season with more salt and pepper if needed.
