1 Carrots (shredded)
1 Bell peppers (red)
.5 Red onions
50 gArugula
30 gParmesan
226 gPenne
2 clovesGarlic
.5 tspItalian seasoning
40 gBlack olives
1 tspMaple syrup
.5 tspDijon mustard
3 tbspOlive oil
2 tbspRed wine vinegar
  1. Cook the pasta according to the package instructions. Then drain and rinse with cold water.
  2. Chop the salad ingredients (tomatoes, carrots, bell peppers, onions, olives, arugula)and add them to a large bowl with the grated parmesan. In a small bowl, whisk together the rest of the ingredients for the dressing.
  3. Add the pasta to the salad ingredients and pour the dressing over the salad. Toss and season with more salt and pepper if needed.
