1 kgPotatoes
60 gSour cream
60 mlMilk
1 tbspButter
4 clovesGarlic
1 tspDried thyme
  1. Peel and cut the potatoes into small-medium cubes. Put the potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil, then cover and reduce heat. Simmer for 20 minutes or until potatoes are tender. Meanwhile, place the butter in a dish with 1 tsp milk or water and whip until fluffy.
  2. Drain and return potatoes and garlic to pan over low heat. Add sour cream and remaining ingredients. Using a masher, mash until smooth and if it's too watery, let it cook a few minutes until the texture is perfect. Season with salt and pepper to taste, and optional chives.
