275 gChicken breast
.25 Red onions
140 gGreek yogurt
225 gShredded cheese (mozzarella)
70 gGouda
10 gFresh cilantro
1 tbspRed chili flakes
120 gFlour
2 tspBaking powder
176 gBarbecue sauce
  1. Season the chicken breasts with salt and pepper and place them in a pot, covered with 1 inch of water or chicken broth. Once the liquid begins to boil, reduce the heat and let simmer for 8-12 minutes.
  2. Meanwhile, in a medium bowl combine the flour, baking powder and half a teaspon of kosher salt and whisk well. Add the yogurt and mix with a fork or spatula until well combined, it will look like small crumbles.
  3. Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).
  4. Preheat oven to 230C. If using a pizza stone, preheat the stone in the oven as well. If using a round pizza pan or sheet pan, spray with oil. Sprinkle a work surface and rolling pin with a little flour and roll the dough out into a large thin round or oval (or you can make 2 smaller pies).
  5. When the chicken is finished, shred with forks and mix in 1/3 of the barbecue sauce. Cover the pizza base with the rest of the barbecue sauce, chicken, mozzarella, red onions, and gouda cheese. Sprinkle with chili flakes and bake for 20 - 25 minutes.
  6. Top with chopped cilantro before serving.
