  1. Mince the garlic, drain the beans (don't rinse), make the stock, chop the spinach and the basil to prep.
  2. Heat the butter, garlic, spices, and some salt and pepper in a large pan over medium heat. Cook for about 2 minutes, until garlic is fragrant.
  3. Stir in the sun-dried tomatoes, vegetable stock, and butter beans. Continue cooking on medium, uncovered, for 5 minutes.
  4. Remove from heat. Stir in the spinach until wilted, then stir in heavy cream, parmesan, fresh basil. Serve warm -- pairs nicely with crusty bread.
