110 gSun-dried tomatoes
250 gTortellini
1 tbspOlive oil
1 tbspVegetable stock
2 tbspFlour
2 tbspTomato paste
  1. Heat the olive oil in a large pan over medium heat. Add the chopped garlic and Italian seasoning and cook for about 30 seconds.
  2. Chop the semi-dried tomatoes, add to the pan, and stir well. Add in the dry stock, then pour in the water and immediately add the flour. Stir until the stock and flour have completely dissolved into the liquid.
  3. Add the tortelloni and bring to a gentle bubble, stirring often to prevent lumps. Cook for 3–5 minutes until the pasta is soft. Pour in the fresh cream, add the spinach leaves and tomato puree, and stir well.
  4. Stir in the Parmesan, then serve topped with fresh basil leaves.
