  1. Cut the cod into chunky 3-inch pieces. In a shallow dish, combine the flour with salt and pepper. Pat the cod fillets dry with kitchen paper, then coat in the seasoned flour and set aside.
  2. Heat oil and 1 tbsp butter in a large non-stick pan over medium-high heat. Fry the cod for 2–3 minutes per side until golden and just opaque in the centre. Remove and set aside.
  3. Lower the heat to medium and add the remaining butter to the same pan. Cook until foaming and golden brown, then add the garlic. Swirl for 1 minute before pouring in the stock. Stir until the butter melts and the stock turns cloudy, then add the parsley and capers.
  4. Simmer for a few minutes, stirring, until the sauce thickens slightly. Season to taste and stir in any resting juices from the cod. Reduce the heat to low, return the cod to the pan, and baste with the sauce until warmed through and fully cooked.
