8 Tomatoes
2 Bell peppers ((red))
1.5 Onions
8 clovesGarlic
15 gBasil
100 mlOat milk
2 tspOlive oil
300 mlVegetable stock
  1. Pre-heat oven to 200ºC (392ºF). Peel, but don't slice the garlic, and dice the onions and peppers.
  2. Toss the tomatoes, onion, garlic and red bell pepper in the olive oil and seasonings. Place everything but the garlic onto a baking tray lined with parchment paper. Roll the garlic in tinfoil and place onto the baking tray. Roast the veggies for 45-50 minutes.
  3. Remove from the oven and place into a blender. Add the stock and basil, blend until smooth. Transfer to a pot, add the oat milk and mix. Allow to simmer for 5 minutes before transferring to your desired bowl.
