| 15 g | Basil | |
| 100 ml | Oat milk | |
| 2 tsp | Olive oil | |
| 300 ml | Vegetable stock |
- Pre-heat oven to 200ºC (392ºF). Peel, but don't slice the garlic, and dice the onions and peppers.
- Toss the tomatoes, onion, garlic and red bell pepper in the olive oil and seasonings. Place everything but the garlic onto a baking tray lined with parchment paper. Roll the garlic in tinfoil and place onto the baking tray. Roast the veggies for 45-50 minutes.
- Remove from the oven and place into a blender. Add the stock and basil, blend until smooth. Transfer to a pot, add the oat milk and mix. Allow to simmer for 5 minutes before transferring to your desired bowl.
