| 2 | Eggs | |
| 500 g | Lobster meat | (cooked) |
| .5 | Cucumber | |
| 1 stick | Celery | |
| 4 | Scallions | |
| 1 tbsp | Lemon juice | |
| 1 clove | Garlic | |
| 10 g | Chives | |
| .5 tsp | Dijon mustard | |
| 1 tbsp | White wine vinegar | |
| 4 | Hot dog buns | |
| 400 ml | Rapeseed oil |
- Prepare the ingredients: roughly chop the lobster. Deseed and finely chop the cucumber, and finely chop the garlic, scallions, and celery. Keep the garlic aside but combine the other prepared ingredients in a bowl for the filling.
- Seperate the yolks from the eggs and add them to a bowl. Whisk in the white wine vinegar, dijon mustard, and garlic until combined. With the vegetable oil in a glass measuring jug, pour a slow and steady stream of the oil into the egg yolk mixture whisking vigorously until a thickened mayonnaise forms. Season to taste with salt and lemon juice. Transfer to a squeeze bottle.
- Place the filling ingredients into a bowl and dress with a little of the mayo until completely coated. Set aside.
- Assemble the rolls by placing the dressed cucumber & lobster mix into the toasted brioche buns, adding splodges of the aioli and garnish with chives and chive flowers.
