| 500 g | Mushrooms | |
| 50 g | Parmesan | |
| 600 g | Spaghetti | |
| 8 cloves | Garlic | |
| 15 g | Basil | |
| 2 tbsp | Italian seasoning | |
| 2 | Bay leaves | |
| 4 tbsp | Olive oil | |
| 1600 g | Chopped tomatoes | |
| 6 tbsp | Tomato paste | |
| 250 ml | Red wine | |
| 4 tbsp | Red wine vinegar | |
| 1 tbsp | Sugar |
- Chop the bacon, onions, carrots, celery, garlic, mushrooms, and tomatoes to prep and set aside. Heat the oil in a large pan and fry the bacon and mince in batches until browned. Add to the slow cooker.
- Add the chopped ingredients and the tomato purée, herbs, wine, vinegar, sugar and seasoning to the slow cooker. Cover and cook on Low for 6-8 hours, then uncover, turn to high and cook for another hour until thick and saucy. During the last 30 minutes, boil some water and cook the pasta.
- Serve over spaghetti and top with parmesan and basil leaves.
